  • 4 large tortillas
  • 1 avocado, sliced
  • 40g baby spinach
  • 4 Tbsp cream cheese or sour cream
  • 200g cooked chicken breast
  • 4 Tbsp tomato salsa
  • 50g corn chips
  • 80g grated cheese
  • Sour cream, to serve

Instructions

  1. Prepare the Tortillas Cuts: Place a tortilla flat on a clean surface or chopping board. Using a knife or scissors, cut from the center of the tortilla outwards toward the edge, creating four sections like slicing a cake.
  2. Fill the Tortilla Quarters: Starting from the cut mark, place fillings in each of the four sections of the tortilla: avocado slices and baby spinach in one quarter; cream cheese or sour cream with cooked chicken in the second; tomato salsa and corn chips in the third; and grated cheese in the fourth quarter.
  3. Fold the Tortilla: Begin folding by lifting the avocado quarter and folding it over the salsa and corn chips section. Then fold this bundle over the chicken quarter, and lastly fold everything over onto the cheese quarter. This folding technique helps to warm the chicken and melts the cheese evenly.
  4. Cook in Sandwich Press: Place the folded tortilla into a preheated hot sandwich press. Cook until the outside of the tortilla turns golden brown and crispy, and the cheese inside starts to melt.
  5. Serve: Remove from the sandwich press and serve immediately with extra sour cream or a spicy mayo dip, according to your preference.

Notes

  • Use cooked chicken breast to save time; leftover roast chicken works well.
  • For a spicier kick, substitute tomato salsa with a chili salsa or add jalapeños.
  • If you don’t have a sandwich press, grill the folded tortillas in a hot skillet with a weight on top until golden and cheese is melted.
