This Easy Ice Cream Sandwich Cake is a delightful no-bake dessert that layers frozen ice cream sandwiches with luscious caramel and chocolate sauces, topped with fluffy whipped topping and optional colorful sprinkles. Perfect for a quick, crowd-pleasing treat that requires minimal prep and chilling time.

Ingredients

Ice Cream Sandwiches

  • 9 whole frozen ice cream sandwiches (unwrapped)

Sauces

  • 1 cup caramel sauce (more or less)
  • 1 cup chocolate sauce (more or less)

Topping

  • 8 ounces whipped topping
  • Rainbow sprinkles (optional)

Instructions

  1. Arrange ice cream sandwiches. Place 3 whole ice cream sandwiches side-by-side on a plate, forming the first layer of the cake.
  2. Add sauces. Spread a layer of caramel sauce evenly over the first layer of ice cream sandwiches, followed by an even layer of chocolate sauce on top of the caramel.
  3. Repeat layering. Add another 3 ice cream sandwiches on top of the sauces, then again spread caramel sauce and chocolate sauce over them as with the first layer.
  4. Top with final layer and whipped topping. Place the last 3 ice cream sandwiches on top and cover the entire cake with the whipped topping, spreading it evenly to coat the sides and top.
  5. Add sprinkles (optional). Sprinkle rainbow sprinkles over the whipped topping to decorate if desired.
  6. Freeze. Freeze the assembled cake for several hours until firm, allowing the layers to set together.
  7. Serve. Remove the cake from the freezer, slice into pieces, and serve. Optionally, drizzle with extra caramel or chocolate sauce before serving.

Notes

  • You can adjust the amount of caramel and chocolate sauces to your taste preference or skip one for a simpler flavor.
  • Unwrap ice cream sandwiches before assembling to avoid the plastic affecting the texture.
  • Use a sharp knife warmed under hot water and dried to ensure clean slices when serving.
  • For extra crunch or flavor, add chopped nuts between layers before adding sauces.
  • Keep the cake frozen until ready to serve for best texture and to prevent melting.
