This Easy Pizza Soup is a comforting and hearty dish featuring ground beef or Italian sausage, pepperoni, and a rich blend of marinara sauce, fire-roasted tomatoes, and broth. Perfect served alongside garlic bread for a complete meal.

Ingredients

Vegetables and Aromatics

  • ½ cup chopped onions
  • ½ cup chopped green bell peppers
  • 2-3 garlic cloves, minced

Meat

  • 1 pound ground beef, ground turkey, or ground Italian sausage
  • 2 oz pepperoni (about ¼ cup), sliced in half or chopped into small pieces

Seasonings and Sauces

  • 1 ½ teaspoons Italian seasoning, adjust to taste
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 14.5 oz canned fire roasted tomatoes

Liquids

  • 2-3 cups broth (beef, chicken, or vegetable)

Toppings

  • Shredded mozzarella cheese (optional, for topping)

Instructions

  1. Heat the Pot: Place a Dutch oven or large pot on medium-high heat to prepare for cooking the meat and vegetables.
  2. Cook Meat and Vegetables: Add the ground beef or Italian sausage to the pot along with the chopped onions, green bell peppers, minced garlic, Italian seasoning, salt, and pepper. Use a meat chopper or wooden spoon to break down the meat as it cooks until it is no longer pink. Drain any excess fat if necessary.
  3. Add Remaining Ingredients: Stir in the sliced pepperoni, marinara sauce, fire roasted tomatoes, and broth. Mix well to combine all flavors evenly.
  4. Simmer the Soup: Reduce the heat to low and cover the pot with a lid. Let the soup simmer gently for 15-20 minutes until it thickens slightly and the ingredients meld together.
  5. Serve with Cheese: Ladle the soup into bowls and top with shredded mozzarella cheese while the soup is hot so the cheese melts beautifully.

Notes

  • Marinara sauce is used instead of pizza sauce because it’s thicker and has more robust flavor, which works better for soup consistency.
  • If the soup becomes too thick, thin it out by adding additional broth to reach your desired consistency.
  • Serving with garlic bread pairs perfectly and delivers a full pizza experience.
