Made from baked purple sweet potatoes blended with aromatic spices and almond or coconut milk, it delivers a creamy texture and warm flavors, perfect served warm or chilled. Ideal for those seeking a gluten-free, vegetarian dish with a unique twist.

Ingredients

Main Ingredients

  • 1 medium purple sweet potato (cooked or baked)
  • 1 cup almond or coconut milk
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon ginger

Instructions

  1. Prepare the Sweet Potato: If you don’t have a cooked purple sweet potato, preheat your oven to 400°F (204°C), clean the sweet potato, wrap it tightly in aluminum foil, and bake it for 50 minutes to 1 hour until tender when pierced with a fork.
  2. Peel the Sweet Potato: Once baked and slightly cooled but still warm, carefully peel off the skin and place the sweet potato flesh into a large bowl if using an immersion blender, or directly into a blender.
  3. Add Ingredients: To the sweet potato, add almond or coconut milk, maple syrup, salt, cinnamon, cardamom, and ginger.
  4. Blend the Mixture: Blend all ingredients together until the mixture is smooth and creamy. Adjust the texture by adding more milk or Greek yogurt if a thinner consistency is desired.
  5. Serve: Serve the porridge warm immediately, or chill it in the refrigerator for 4–6 hours to enjoy it cool. Garnish with extra almond or coconut milk, Greek yogurt, fresh fruit, peanut butter, nuts, or additional maple syrup or honey as preferred.
