This easy soft flour tortilla recipe yields tender, pliable tortillas perfect for tacos, fajitas, or wraps. Made with simple pantry ingredients, including plain flour, lard, salt, baking powder, and boiling water, these homemade tortillas are fried quickly in a non-stick pan for a delicious fresh taste and texture.

Ingredients

Dry Ingredients

  • 625 g plain flour
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon baking powder

Wet Ingredients

  • 125 g lard (at room temperature, cut into small cubes; or substitute with beef dripping, butter, or olive oil)
  • 250 ml boiling water

Instructions

  1. Mix Dry Ingredients: Place the flour, salt, and baking powder into a large mixing bowl and mix thoroughly to evenly distribute the salt and baking powder.
  2. Dissolve Lard in Water: Pour boiling water into a measuring jug and add the cubes of lard. Stir until the lard is completely dissolved in the water.
  3. Combine Wet and Dry: Pour the water and lard mixture into the flour mixture. Stir to bring the ingredients together into a ball of dough, similar in texture to playdough. Adjust water or flour slightly if the dough feels too dry or wet.
  4. Knead Dough: Knead the tortilla dough for 5 minutes until smooth and elastic.
  5. Divide Dough: Divide the dough into either 20 balls of 50g for larger tortillas (~20cm diameter) or 25 balls of 40g for smaller tortillas (~15cm diameter).
  6. Rest Dough Balls: Cover the dough balls loosely with a slightly damp, clean tea-towel and let rest for 30 minutes to relax the gluten.
  7. Heat Pan: Preheat a large non-stick frying pan over medium heat for about 2 minutes.
  8. Roll Tortillas: Take one dough ball (keep the rest covered) and roll it out as thinly and evenly as possible, rotating frequently to maintain a round shape.
  9. Cook Tortilla: Place the rolled tortilla on the hot pan and fry for approximately 30 seconds on each side, until lightly browned with some brown spots. Adjust heat as needed to prevent burning or lack of browning.
  10. Continue Rolling and Cooking: While cooking one tortilla, roll out the next. After cooking, keep tortillas warm and pliable in a tortillada or covered container.
  11. Repeat Process: Continue rolling and cooking all the tortillas until done, storing them in the tortillada to keep soft.
  12. Serve: Serve warm tortillas for tacos, fajitas, or wraps alongside your favorite fillings and toppings.

Notes

  • You can adjust the salt to taste according to preference.
  • For healthier or dairy-free options, use olive oil instead of lard or butter.
  • Use a tortillada or wrap cooked tortillas in a clean tea towel to keep them warm and pliable.
  • If the dough is too sticky, add a bit more flour; if too dry, add a splash more boiling water carefully.
