Egg Foo Young is a classic Chinese-style omelette packed with mixed vegetables, bean sprouts, and spring onions, flavored with soy sauce, garlic powder, and white pepper. This quick and savory dish is perfect for a satisfying meal ready in just 20 minutes, yielding fluffy and flavorful omelettes cooked to golden perfection in a pan with sesame oil.

Ingredients

Egg Mixture

  • 8 eggs
  • 1 Tbsp soy sauce
  • 1 tsp garlic powder
  • ¼ tsp white pepper

Vegetables

  • 1 cup frozen mixed vegetables, thawed
  • 1 cup bean sprouts
  • 2 spring onions, finely sliced

Cooking

  • 4 tsp sesame oil

Instructions

  1. Prepare the egg mixture: In a large bowl, whisk together the 8 eggs, 1 tablespoon soy sauce, 1 teaspoon garlic powder, and ¼ teaspoon white pepper until well combined and slightly frothy.
  2. Add vegetables: Mix in the thawed 1 cup of frozen mixed vegetables, 1 cup of bean sprouts, and finely sliced 2 spring onions to the egg mixture, ensuring everything is evenly distributed.
  3. Heat the pan: Place a frying pan over medium heat and add 1 teaspoon of sesame oil, allowing it to warm up until shimmering but not smoking.
  4. Cook the omelette: Pour approximately one cup of the egg and vegetable mixture into the pan. Using a spatula, gently pull in the edges to form a neat round shape. Spread additional vegetables on top evenly. Cook for several minutes until the edges begin to curl and the bottom turns golden brown.
  5. Flip and finish cooking: Carefully flip the omelette over and cook for a few more minutes until fully cooked through and golden. Repeat the process with the remaining mixture, adding 1 teaspoon sesame oil each time, to make a total of 4 large omelettes.
  6. Serve: Serve the Egg Foo Young immediately hot with your choice of sides such as steamed rice or dipping sauces.

Notes

  • Make sure vegetables are well thawed to prevent excess water in the omelette.
  • Use a non-stick frying pan for easier flipping and cooking.
  • You can add cooked meats such as shrimp, pork, or chicken for a protein boost.
  • Adjust seasoning like soy sauce and white pepper according to taste preferences.
  • Sesame oil adds authentic flavor; avoid substituting with other oils for best results.
