A classic French Yogurt Cake that’s moist, tender, and easy to make. Utilizing yogurt for a delicate crumb, this cake is perfect for breakfast, dessert, or a snack, with a simple mix of pantry staples and a light vanilla flavor.

Ingredients

Dry Ingredients

  • 1 ½ cup Flour
  • 2 tsp Baking Powder
  • ½ tsp Salt

Wet Ingredients

  • 1 cup Sugar
  • ½ cup Oil
  • 2 Eggs
  • ¾ cup Yogurt
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease your preferred pan—bundt tin, loaf pan, or square tin—and lightly dust it with flour to prevent sticking. Note that a loaf pan will require additional baking time.
  2. Mix Wet Ingredients: In a large bowl, combine sugar, oil, eggs, yogurt, and vanilla extract. Whisk together until smooth and fully incorporated.
  3. Combine Dry Ingredients: In a medium bowl, sift together the flour, baking powder, and salt. Sifting helps achieve a tender texture by aerating the flour mixture.
  4. Blend Wet and Dry Ingredients: Gently fold the sifted dry ingredients into the wet mixture, mixing just until everything is combined to avoid overworking the batter.
  5. Bake the Cake: Pour the batter into your prepared pan. Bake for about 30 minutes if using a bundt pan, or longer as needed for a loaf pan, until a toothpick inserted into the center comes out clean.
  6. Cool the Cake: Allow the cake to cool in the pan for 10 minutes, then invert it onto a plate or platter to cool completely before serving.

Notes

  • For a citrus twist, add 1 tbsp of your favorite citrus zest to the batter.
  • Serve drizzled with warmed citrus marmalade for an extra burst of flavor.
  • The baking time may vary depending on the pan used; loaf pans typically require more time than bundt or square pans.
