Ingredients

Strawberry Mixture

  • 1 lb strawberries, diced into 1-inch chunks
  • ¼ cup honey
  • 1 cup granulated sugar
  • ¼ tsp ground cinnamon
  • 1 medium lemon, juiced

Ice Cream Base

  • ½ cup chocolate chips, smashed
  • 2 cups heavy cream
  • 1 cup half and half
  • ½ tsp vanilla extract

Instructions

  1. Prepare the Strawberry Mixture: Combine diced strawberries, honey, sugar, ground cinnamon, and lemon juice in a medium pot over medium-low heat. Simmer the mixture for 10-15 minutes while gently crushing the strawberries until they become juicy and softened. The mixture should reduce by half and thicken to a jam-like consistency. Remove from heat and let cool slightly. For a smoother texture without strawberry chunks, blend the mixture once cooled.
  2. Pre-chill the Ice Cream Maker: Pour the strawberry mixture into your KitchenAid ice cream mixer or preferred ice cream maker. Start the machine and let it run for about 5 minutes to chill the mixture before adding the remaining ingredients.
