Perfect for a hearty family dinner, this dish combines savory flavors and melt-in-your-mouth texture for a truly satisfying meal.

Ingredients

Beef & Potatoes

  • 1.5 pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved

For Searing

  • 1 tablespoon olive oil

Garlic Butter Sauce

  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon black pepper

For Slow Cooker

  • 0.25 cup beef broth

Instructions

  1. Prepare Ingredients: Gather all your ingredients. Cut the beef into bite-sized pieces and halve the baby potatoes for even cooking.
  2. Parboil Potatoes (Optional): For even more tender potatoes, parboil the halved baby potatoes in boiling water for a few minutes. Drain and set aside.
  3. Sear Beef: Heat the olive oil in a skillet over medium-high heat. Add the beef bites and sear until browned on all sides. This step locks in flavor and helps develop a rich taste.
  4. Make Garlic Butter Sauce: In a small mixing bowl, whisk together the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper until well combined.
  5. Add to Slow Cooker: Place the halved baby potatoes and seared beef in the bottom of the slow cooker. Pour the garlic butter sauce over everything and add the beef broth.
  6. Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is fork-tender and the potatoes are cooked through.
  7. Rest and Serve: Let the finished dish rest for about 10 minutes before serving to allow the flavors to meld. Serve hot and enjoy!

Notes

  • This dish is very versatile—try using other cuts of beef or adding vegetables like carrots or mushrooms.
  • For a richer flavor, finish with a sprinkle of chopped parsley or extra melted butter before serving.
  • Leftovers store well and make a delicious next-day meal.
