This Garlic Butter Grilled Shrimp recipe features succulent large shrimp marinated in a flavorful garlic butter mixture enhanced with paprika, cayenne pepper, and fresh parsley. Ingredients

Shrimp and Marinade

  • 2 pounds large tail-on shrimp, peeled and deveined (about 30 to 35 shrimp)
  • 3 garlic cloves, minced
  • ½ cup (1 stick) salted butter, melted
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • 2 tablespoons minced fresh flat-leaf parsley, plus more for serving
  • 1 lemon cut into wedges, for serving

Instructions

  1. Preheat the grill: Preheat your grill or grill pan to medium-high heat to ensure it is hot enough to sear the shrimp nicely.
  2. Make the garlic butter marinade: In a large bowl, whisk together melted butter, paprika, cayenne pepper, garlic powder, sea salt, minced parsley, and minced garlic until fully combined. Reserve ¼ cup of this garlic butter mixture in a small bowl.
  3. Marinate the shrimp: Add the shrimp to the remaining garlic butter mixture in the large bowl and toss thoroughly so all shrimp are evenly coated with the marinade.
  4. Skewer the shrimp: Thread the shrimp tightly onto 6 skewers, dividing them evenly so each skewer holds approximately 5 to 6 shrimp.
  5. Grill the shrimp: Place the shrimp skewers on the preheated grill or grill pan. Cook without moving them for 3 to 4 minutes to develop a good char. Flip the skewers and continue grilling for another 3 to 4 minutes until shrimp are opaque, lightly charred, and cooked through.
  6. Finish and serve: Transfer the grilled shrimp skewers to a serving platter. Brush generously with the reserved garlic butter and sprinkle additional parsley on top. Serve immediately with lemon wedges on the side for squeezing over the shrimp.
