  • 2 cloves garlic, thinly sliced (use 3-4 cloves if making crispy garlic bits for garnish)
  • 1 sprig fresh rosemary
  • 1 tablespoon chopped chives

Instructions

  1. Prepare Garlic and Rosemary Infused Oil: Preheat a skillet over medium-low heat and add the olive oil. Add the sliced garlic and whole rosemary sprig, stirring gently for about 2 minutes until the garlic turns golden brown. Avoid burning the garlic. Remove garlic onto a paper towel-lined plate for crispiness and discard the rosemary. Keep the infused oil in the skillet for later use.
  2. Make the Butter Bean Mash: Place the drained and rinsed butter beans into a food processor. Add the lemon juice and half of the chicken broth. Top with the crispy garlic bits (saving some for garnish if you used extra cloves). Process until smooth and creamy.
  3. Heat and Adjust Consistency: Transfer the mashed butter beans back to the skillet with the garlicky oil. Cook over medium heat for 2-3 minutes, stirring frequently until heated through. Add the remaining broth to achieve desired mash thickness or omit for a thicker consistency.
  4. Season and Garnish: Remove from heat and stir in chopped chives, salt, and pepper to taste. Keep in mind the broth and beans might add saltiness, so season cautiously. Serve warm garnished with additional chives, crispy garlic bits, and a drizzle of olive oil or melted butter if desired.
