Ingredients

Chicken

  • 4 boneless skinless chicken breasts, pounded to even ¾-inch thickness
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon cracked black pepper, or ⅛ teaspoon ground black pepper

Garlic Herb Butter

  • ½ cup butter, slightly softened
  • 2 teaspoons minced garlic
  • ½ teaspoon garlic powder
  • 1 teaspoon finely chopped fresh parsley
  • 1 teaspoon finely chopped fresh cilantro
  • 1 teaspoon fresh thyme, or finely chopped fresh basil

Instructions

  1. Preheat oven: Preheat your oven to 475°F (245°C) to ensure it’s hot and ready for baking the chicken after searing.
  2. Season chicken: Sprinkle both sides of the chicken breasts evenly with salt and pepper to enhance the flavor.
  3. Heat skillet and melt butter: In a large skillet over medium heat, melt 1 tablespoon of butter and then drizzle in 1 tablespoon of olive oil to prevent the butter from burning and to help brown the chicken.
  4. Sear chicken: Add the seasoned chicken breasts to the skillet and cook for 2-4 minutes on each side until they develop a golden-brown crust, but remain undercooked internally.
  5. Transfer to oven: Place the browned chicken into the preheated oven. If your skillet isn’t oven-safe, transfer the chicken to a greased baking dish first. Bake the chicken for about 15 minutes until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked.
  6. Prepare garlic herb butter: While the chicken is baking, in a small bowl combine the softened ½ cup butter, minced garlic, garlic powder, and finely chopped fresh parsley, cilantro, and thyme (or basil). Mash and mix with a fork until all ingredients are evenly incorporated.
  7. Finish and serve: Once the chicken is done, immediately spoon a generous amount of the garlic herb butter on top of each breast. Allow the butter to melt over the hot chicken for a couple of minutes before slicing and serving. Enjoy the flavorful, buttery chicken!
