Ingredients

Potatoes

  • 1 1/2 lbs fingerling potatoes

  • 1 Tbsp avocado oil
  • 3 Tbsp butter (or ghee)

  • 1 Tbsp fresh herbs (oregano and parsley preferred)
  • Coarse sea salt, to taste

Instructions

  1. Boil Potatoes: Place the fingerling potatoes in a pot and cover them with water. Bring to a full boil over high heat and cook for about 15 minutes, or until the potatoes are soft when pierced with a fork. Drain the water completely.
  2. Preheat Oven and Prepare Potatoes: Preheat your oven to 425°F (220°C). Transfer the boiled potatoes to a casserole dish or baking sheet. Drizzle the potatoes with avocado oil and melted butter. Sprinkle the garlic evenly over the potatoes. Use a spoon to gently toss everything together until the potatoes are evenly coated with the oil, butter, and garlic.
  3. Roast Potatoes: Place the dish in the preheated oven and roast the potatoes for 20 to 25 minutes. Roast until the potatoes turn golden-brown and develop a crispy exterior.
