These Grapefruit Bars are a delightful twist on classic lemon bars, featuring a buttery shortbread crust topped with a tangy, sweet grapefruit filling. Perfectly balanced with tartness and sweetness, they offer a refreshing dessert that’s easy to make and sure to impress.

Ingredients

For the crust:

  • 1 cup all-purpose flour
  • 1/4 cup confectioners sugar
  • 1/4 cup butter

For the filling:

  • 1 cup cane sugar
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • 2 eggs
  • 3 tbsp grapefruit juice
  • 1 tbsp grapefruit zest
  • 1 tbsp pink food coloring (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the bars.
  2. Make Crust: Melt the butter in a microwave-safe mixing bowl. Then fold in the all-purpose flour and confectioners sugar until a shortbread texture forms. Using a pastry blender can help eliminate any flour clumps for a smooth dough.
  3. Prepare Baking Dish: Line an 8×8 inch Pyrex baking dish with parchment paper. Press the crust mixture evenly into the lined pan to ensure consistent thickness across the crust.
  4. Bake Crust: Bake the crust in the preheated oven for 20 minutes until lightly golden and set.
  5. Make Filling: While the crust bakes, combine sugar, flour, and baking powder in the same mixing bowl. Add the eggs and beat with an electric hand mixer until you achieve a curd-like batter texture.
  6. Add Flavor: Mix in freshly squeezed grapefruit juice, grapefruit zest, and pink food coloring if using, blending until fully combined.
  7. Assemble Bars: Remove the baked crust from the oven and gently pour the grapefruit filling over it, spreading evenly.
  8. Bake Bars: Return the pan to the oven and bake for an additional 25 minutes until the filling is set but slightly jiggly in the center.
  9. Chill Bars: Allow the bars to cool slightly, then place them in the freezer for 2 hours to chill and firm up.
  10. Serve: Let the bars sit at room temperature for 15-20 minutes before slicing. Garnish with powdered sugar and fresh grapefruit slices if desired.

Notes

  • Using an electric hand mixer for the filling is crucial to achieve the desired curd-like texture.
  • Press the crust evenly for uniform thickness and even baking.
  • Allow bars to chill thoroughly for clean slicing.
  • Optional pink food coloring enhances visual appeal but can be omitted.
  • Store leftover bars refrigerated and consume within 3-4 days for best freshness.
