A classic Greek salad dressing combining extra-virgin olive oil, red wine vinegar, garlic, and herbs for a tangy, flavorful addition to salads and Mediterranean dishes.

Ingredients

Greek Salad Dressing Ingredients

  • ⅓ cup extra-virgin olive oil
  • 4 tablespoons red wine vinegar
  • 1 large garlic clove, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon ground sumac (optional)
  • ⅜ teaspoon kosher salt (¼ + ⅛ teaspoon), or more to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare Ingredients: Mince the garlic clove finely to release its full flavor and measure out all dressing ingredients for easy mixing.
  2. Combine Ingredients: In a small jar or bowl, add the extra-virgin olive oil, red wine vinegar, minced garlic, dried oregano, Dijon mustard, ground sumac (if using), kosher salt, and freshly ground black pepper.
  3. Mix Dressing: Whisk all the ingredients together vigorously or put the lid on the jar and shake it well until fully emulsified and combined, creating a smooth dressing.
  4. Serve or Store: Use immediately on salads or refrigerate in the jar for up to one week. Shake or whisk again before use as the ingredients may separate over time.

Notes

  • The ground sumac is optional but adds a unique tangy and lemony flavor if available.
  • Adjust salt and pepper according to your taste preference.
  • This dressing pairs best with Greek salad, fresh vegetables, or as a marinade for grilled vegetables or meats.
  • Store leftovers in an airtight container in the refrigerator and bring to room temperature before using, giving it a good shake.
