This easy grilled shrimp recipe offers a flavorful and quick seafood dish perfect for any season. Marinated in a zesty blend of olive oil, lemon juice, and spices, the shrimp is skewered and grilled to juicy perfection, making it an ideal main course or appetizer for gatherings.

Ingredients

Shrimp and Marinade

  • 1 pound large shrimp (peeled and deveined)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon oregano
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder

For Serving

  • Chopped parsley
  • Lemon slices

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, salt, black pepper, oregano, paprika, and garlic powder to create a flavorful marinade.
  2. Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade bowl and toss gently to coat them evenly. Allow the shrimp to marinate for at least 15 minutes, or up to 2 hours for more intense flavor.
  3. Skewer the Shrimp: Thread 4-6 shrimp onto each skewer which have been soaked beforehand to prevent burning. Place the skewers on a plate as you assemble them so they are ready for grilling.
  4. Grill the Shrimp: Preheat a grill or grill pan over medium-high heat. Cook the shrimp skewers for 2-3 minutes per side until the shrimp turn pink and opaque, indicating they are perfectly cooked.
  5. Serve: Remove the shrimp from the grill and serve warm, garnished with chopped parsley and lemon slices for a fresh citrus finish.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Do not overcook shrimp as they can become tough and rubbery; they cook quickly and are done when opaque and pink.
  • For a smoky flavor, consider using a charcoal grill instead of a grill pan.
  • Leftover grilled shrimp can be used in salads, tacos, or pasta dishes the next day.
