  • 1 egg
  • 1 tsp English mustard (can be replaced by Dijon or another type of mustard)
  • 1 tsp sugar or another sweetener (Monk Fruit sweetener is used in this recipe)
  • 1 tbsp apple cider vinegar (or lemon juice)
  • 0.6 cups vegetable (rapeseed) oil (150 ml)
  • 1/2 tsp salt

Instructions

  1. Combine Ingredients: Add the egg, mustard, sugar (or alternative sweetener), apple cider vinegar, vegetable oil, and salt to a clean mason jar suitable for blending.
  2. Initial Blending: Insert an immersion blender into the jar and keep it steady at the bottom. Blend for 20-30 seconds until you see a thick, white, and foamy mixture forming at the bottom of the jar. Do not raise the blender during this step to ensure proper emulsification.
  3. Emulsify Remaining Mixture: Slowly raise the immersion blender to incorporate the rest of the ingredients. Continue blending for another 30-40 seconds until the mayonnaise achieves a uniform, thick, and creamy consistency.
