Ingredients

Vegetables

  • 3 carrots, chopped (325g)

  • 1 small head cabbage, chopped (about 1.5 pounds/675g)

  • 2 tablespoons olive oil
  • 4 cups chicken broth (907g)
  • 1 (28-ounce/793g) can diced tomatoes

Seasonings

  • 1½ teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • Chopped fresh parsley for garnish

Instructions

  1. Sauté vegetables: Heat the olive oil in a large pot over medium-high heat. Add the chopped carrots, celery, onion, and minced garlic. Cook, stirring occasionally, until the vegetables are tender and fragrant, about 8 minutes.
  2. Add main ingredients: Stir in the chopped cabbage, chicken broth, diced tomatoes with their juice, dried thyme, salt, and ground black pepper. Mix well to combine.
