Ingredients

Chicken Patties

  • 1 lb ground chicken

  • 1/4 cup chopped cilantro
  • 6 scallions (white parts only)
  • 3/4 tsp salt
  • 3/4 tsp soy sauce

Herby Sauce

  • 5 tbsp mayonnaise
  • 1/4 cup finely chopped mint
  • 1/4 cup finely chopped cilantro
  • 6 scallions (green parts, thinly sliced)
  • A squeeze of lime juice
  • Salt and pepper to taste

Burger Assembly

  • 6 burger buns
  • Sliced onions, tomatoes, jalapenos for topping
  • Butter for toasting buns

Instructions

  1. Prep Ingredients: Chop the scallions, separating the white and green parts. Finely chop the cilantro and mint and set all aside for use in patties and sauce.
  2. Make Patties: In a mixing bowl, combine the ground chicken with bread crumbs, mayonnaise, chopped mint, cilantro, white scallion parts, salt, soy sauce, pepper, and ginger paste if using. For a smoother burger texture, blend the mayo, jalapenos, mint, scallions, and cilantro before mixing. Form the mixture into 6 evenly sized patties.
  3. Cook Patties: Heat a pan over medium heat and cook the chicken patties for 4-5 minutes on each side until fully cooked and golden brown.
  4. Prepare Sauce: In a small bowl, mix the mayonnaise with finely chopped mint, cilantro, green scallion parts, and a squeeze of lime juice. Season with salt and pepper to taste. Adjust seasoning as needed.
  5. Toast Buns: Lightly butter the burger buns and toast them until golden and slightly crisp.
