  • 1 pound lean ground beef
  • 2 medium sweet potatoes, scrubbed and diced (about 4 cups)
  • 2 medium green bell peppers, chopped (about 1 cup)
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  1. Heat the olive oil: Warm 1 tablespoon of extra-virgin olive oil in a large cast-iron skillet over medium heat to prepare for sautéing the aromatics.
  2. Sauté onion and garlic: Add the diced red onion and minced garlic to the skillet. Cook them until softened and fragrant, about 2 to 3 minutes, stirring occasionally to prevent burning.
  3. Cook the ground beef: Add the lean ground beef to the skillet. Stir occasionally while breaking the meat apart using a spatula until it turns brown and is no longer pink, which takes about 2 to 3 minutes.
  4. Add vegetables and seasoning: Stir in the diced sweet potatoes and chopped green bell peppers. Season the mixture with ½ teaspoon of salt and ¼ teaspoon of ground pepper to taste.
  5. Cook until tender: Cover the skillet with a lid and cook over medium heat. Stir occasionally to ensure even cooking. Continue cooking until sweet potatoes are tender, approximately 10 to 12 minutes.
