Homemade Rice Krispie Treats are a classic, sweet snack made with just 3 basic ingredients: butter, mini marshmallows, and Rice Krispies cereal. These treats are quick to prepare, feature gooey marshmallow pockets, and can be easily frozen for later enjoyment.

  • ¾ cup butter (170g)
  • 2 (10-ounce/283g) bags mini marshmallows, divided
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 10 cups Rice Krispies Cereal (310g)

Instructions

  1. Prepare the Pan: Line a 13×9-inch baking pan with parchment paper or foil to prevent sticking and allow for easy removal of the treats later.
  2. Melt Butter: In a large pot over medium heat, melt ¾ cup of butter. While the butter melts, reserve 2 cups of the mini marshmallows and set them aside for later use.
  3. Melt Marshmallows: Once the butter is fully melted, add the remaining marshmallows along with 2 teaspoons of vanilla extract and ½ teaspoon of salt. Stir continuously with a silicone spatula until the marshmallows are completely melted and combined, about 5 minutes. Remove the pot from heat.
  4. Combine Cereal: Immediately add 10 cups of Rice Krispies cereal to the melted marshmallow mixture and stir thoroughly until the cereal is fully coated and incorporated. Note that the mixture will be very sticky.
  5. Add Reserved Marshmallows: Stir in the reserved 2 cups of mini marshmallows until they are evenly dispersed throughout the mixture. Do not overmix as the marshmallows should remain slightly intact to create gooey pockets.
  6. Press Mixture into Pan: Pour the sticky mixture into the prepared baking pan. Using a silicone spatula or the wrapper from the butter stick (which is naturally greased), press the mixture firmly and evenly into the pan to create a uniform layer.
  7. Cool and Cut: Let the treats cool completely for about 1 hour. Once cooled, use the parchment paper to lift them from the pan. Lightly grease a sharp knife to prevent sticking and cut into squares for serving.

Notes

  • Save the butter wrapper to press the mixture into the pan; it’s naturally greased and helps keep your hands clean.
  • For best results, do not overmix the reserved marshmallows so they retain little gooey pockets in the treats.
  • These treats freeze well; store them in an airtight container in the freezer and thaw at room temperature before serving.
