This Hot Cheesy Corn Dip is a deliciously creamy and flavorful appetizer featuring golden-browned corn, sautéed onions and peppers, melted Monterey Jack and cheddar cheeses, and a hint of spice. Perfect for parties or game day, this dip is baked until bubbly and golden on top.

Ingredients

Main Ingredients

  • 1 tablespoon butter
  • 2 cups corn (fresh, thawed frozen or drained canned)
  • 1 tablespoon butter
  • 1/2 cup onion, diced
  • 1/4 cup red bell pepper, diced
  • 2 green onions, sliced
  • 1 jalapeno, finely diced
  • 1 clove garlic, chopped
  • 1/4 cup mayonnaise
  • 1/2 cup Monterey Jack cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • Cayenne, salt and pepper to taste

Instructions

  1. Brown the Corn: Melt 1 tablespoon of butter in a pan over medium-high heat. Add the corn and cook until it starts to turn golden brown, about 5 minutes. Remove from heat and set aside.
  2. Sauté Onions and Peppers: Melt another tablespoon of butter in the same pan over medium-high heat. Add the diced onion and red bell pepper. Cook until the onions are tender, about 3 to 5 minutes.
  3. Add Aromatics: Stir in the sliced green onions, finely diced jalapeno, and chopped garlic. Cook for about 1 minute until fragrant.
  4. Mix Ingredients: In a bowl, combine the browned corn, sautéed vegetables, mayonnaise, shredded Monterey Jack and cheddar cheeses, cayenne, salt, and pepper. Reserve some cheese for topping.
  5. Assemble and Bake: Pour the mixture into a baking pan. Sprinkle the reserved cheese evenly on top. Bake in a preheated oven at 350°F (180°C) until the dip is bubbling on the sides and golden brown on top, about 20 to 30 minutes.

Notes

  • You can use fresh, frozen (thawed), or canned corn based on availability.
  • Adjust the amount of jalapeno to control the heat level.
  • For a richer flavor, substitute mayonnaise with sour cream or cream cheese.
  • The dip pairs perfectly with tortilla chips, crackers, or crusty bread.
  • Make sure to monitor the baking towards the end to avoid burning the cheese topping.
