Ingredients

Chicken

  • 1 lb chicken breast, diced into 1-2 inch pieces
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons corn starch (or more, as needed)

Sauce

  • 3 tablespoons hot honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced (or ¼ teaspoon garlic powder)
  • 1 tablespoon lime juice (from ½ lime)

For Cooking & Serving

  • 1 tablespoon olive oil (or garlic herb butter or sesame oil)
  • Chopped scallions for garnish
  • Cooked rice, for serving
  • Steamed veggies or broccoli florets, for serving (optional)

Instructions

  1. Season and coat the chicken. Lightly season the cubed chicken with salt and pepper. In a medium bowl, mix the chicken with corn starch. Add 1-2 tablespoons more corn starch if needed until the chicken has a light dusting of corn starch.
  2. Prepare the hot honey sauce. In a small bowl, combine hot honey, soy sauce, minced garlic, and lime juice. Mix well, ensuring the honey is well incorporated.
  3. Heat the skillet and cook chicken. Preheat a large skillet over high heat. Add olive oil (or your chosen oil or butter). Add the chicken and cook undisturbed for 2-3 minutes to achieve a golden brown crust. Flip the chicken and stir fry until fully cooked through.
  4. Add and combine the sauce. Pour the hot honey soy sauce into the skillet. Stir fry for about 1 minute to coat the chicken evenly. Optionally, reduce heat to low and simmer for 1-2 minutes to thicken the sauce.
  5. Serve with rice and garnish. Plate the hot honey chicken over cooked rice. Garnish generously with chopped scallions and an extra drizzle of hot honey if desired.
  6. Optional: Prepare hot honey veggies. Remove chicken from the skillet, leaving excess sauce. Turn off heat to prevent burning.
  7. Steam vegetables. Steam mixed veggies or broccoli florets in the microwave for 3-4 minutes until tender but still crisp.
  8. Add steamed veggies to sauce. Add steamed veggies to the skillet with the leftover sauce. Return heat to medium and stir fry for 1-2 minutes to coat veggies in sauce.
  9. Serve veggies alongside chicken. Serve the sauced veggies with the hot honey chicken over rice for a balanced meal.
