These Jalapeño Pepper Jack Cheeseburger Sliders are a flavorful twist on classic sliders, packed with spicy jalapeños, pepper jack and cheddar cheeses, and a creamy special sauce. Perfect for parties or casual get-togethers, they combine juicy seasoned ground meat, melty cheese, and a buttery garlic herb topping baked to perfection on soft dinner rolls.

Ingredients

Slider Meat and Seasoning

  • 1 pound ground beef, chicken, or turkey
  • 1 jalapeño, seeded if desired, and chopped
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste

Slider Assembly

  • 1 package (12 count) dinner rolls, halved lengthwise
  • 4 ounces cream cheese, at room temperature
  • 1/3 cup drained pickled jalapeños
  • 4-6 slices pepper jack cheese
  • 1 cup shredded spicy cheddar or regular cheddar

Butter Topping

  • 2 tablespoons salted butter, at room temperature
  • 1 clove garlic, chopped
  • 1 tablespoon chopped fresh basil or cilantro
  • 2 green onions, chopped

Special Sauce

  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 clove garlic, grated
  • 1 tablespoon pickled jalapeño juice
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Make the special sauce: In a medium bowl, combine mayonnaise, ketchup, grated garlic, pickled jalapeño juice, and Worcestershire sauce. Mix well and set aside to let the flavors meld.
  2. Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the assembled sliders.
  3. Cook the meat mixture: Heat a skillet over medium heat. Add the ground meat along with the chopped jalapeño, Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and black pepper. Cook, breaking up the meat with a spoon, until it is thoroughly browned and cooked through, about 10 minutes. Remove from heat.
  4. Assemble the sliders: On a parchment-lined baking sheet, place the bottom halves of the dinner rolls. Spread a layer of cream cheese over each bottom bun, then add the drained pickled jalapeños. Pile on the cooked meat evenly across all buns. Drizzle about 1/4 cup of the prepared special sauce over the meat on all sliders. Layer with pepper jack cheese slices followed by the shredded cheddar cheese.
  5. Prepare the butter topping: In a small bowl, combine the softened butter with chopped garlic, fresh basil or cilantro, and chopped green onions. Spread this mixture evenly over the top halves of the rolls.
  6. Bake the sliders: Place the topped rolls on top of the assembled bottoms and bake all sliders in the preheated oven for 20-30 minutes, or until the cheeses have melted and the tops are golden and fragrant.
