A quick and easy single-serving keto chocolate chip mug cookie made with almond flour and sugar-free sweetener, ready in just six minutes. Perfect for a low-carb sweet treat that satisfies your dessert cravings without breaking your diet.

Ingredients

Dry Ingredients

  • 3 Tbsp Super Fine Almond Flour (OR 1 Tbsp coconut flour)
  • 1 Tbsp sugar-free granulated sweetener (of choice)
  • 2 tsp sugar-free chocolate chips

Wet Ingredients

  • 2 tsp melted butter (or coconut oil)
  • 1 egg yolk

Instructions

  1. Melt Butter: Melt the butter in a small ramekin or mug and allow it to cool slightly to prevent cooking the egg yolk prematurely.
  2. Mix Ingredients: Stir in the egg yolk, almond flour, and sugar-free sweetener until a thick dough forms. Then fold in the sugar-free chocolate chips evenly.
  3. Microwave Cookie: Microwave the mixture on high for 40 to 60 seconds, about 45 seconds is ideal, until the cookie sets around the edges but remains slightly gooey in the center.
  4. Enjoy: Let the cookie cool a bit before digging in to enjoy a warm, comforting keto dessert made in minutes.

Notes

  • Use super fine almond flour for the best texture; coconut flour can be substituted but adjust amount accordingly.
  • Ensure the melted butter is cooled slightly before mixing with egg yolk to avoid scrambling.
  • Microwave times may vary; watch carefully to avoid overcooking.
  • This recipe is perfectly portioned for one serving.
  • Sugar-free sweeteners such as erythritol, monk fruit, or stevia blends work well.
