Ingredients

Wet Ingredients

  • 3 large eggs
  • 1 tsp cider vinegar
  • 1/2 cup (1 stick) unsalted butter (melted and cooled)

Dry Ingredients

  • 1/3 cup + 1 Tbsp coconut flour (leveled)
  • 1/2 tsp sea salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp Italian seasoning

Other

  • 1/2 cup grated cheese

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 400 degrees F and generously grease a muffin pan with butter, ghee, shortening, or cooking oil to prevent sticking.
  2. Mix Wet Ingredients: In a mixing bowl, beat together the eggs, cider vinegar, and melted cooled butter until well combined.
  3. Combine Dry Ingredients: In a separate bowl, stir together the coconut flour, sea salt, baking powder, and baking soda.
  4. Form Dough: Pour the dry mixture into the wet ingredients bowl and mix thoroughly until a thick, sticky, somewhat wet dough forms.
  5. Fill Muffin Pan: Spoon the dough into the muffin pan holes, filling each about two-thirds full.
  6. Bake Biscuits: Bake on the center rack of the preheated oven for 12 to 15 minutes, or until the biscuits are golden brown around the edges.
  7. Cool and Remove: Allow biscuits to cool for at least 30 minutes before carefully running a knife around the edges to release them from the pan.

Notes

  • Ensure the muffin pan is well-greased to avoid sticking.
  • Cooling biscuits before removing helps maintain their shape.
  • You can substitute the cheese with your preferred hard cheese.
  • Use fresh baking powder and baking soda for best rise.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
