Deliciously rich and creamy Keto Peanut Butter Buckeyes, perfect for a low-carb and sugar-free treat. These bite-sized candies combine natural peanut butter with sugar-free chocolate, coated in a smooth chocolate shell, making a perfect snack or dessert for keto enthusiasts.

Ingredients

Peanut Butter Filling

  • 1 cup natural peanut butter
  • 3 Tbsp butter (or coconut oil, melted)
  • 1 tsp pure vanilla extract
  • 1/4 tsp sea salt (to taste)
  • 2 1/2 cups sugar-free confectioners sugar

Chocolate Coating

  • 1 1/4 cups sugar-free dark chocolate chips
  • 1 Tbsp coconut oil

Instructions

  1. Prepare the Peanut Butter Mixture: In a stand mixer or mixing bowl, combine the natural peanut butter, melted butter (or coconut oil), pure vanilla extract, and sea salt. Mix until the ingredients are completely smooth and well incorporated.
  2. Add Confectioners Sugar: Gradually add the sugar-free confectioners sugar to the mixture, beating until combined. The mixture should be thick, slightly sticky but not too gooey. If it is too sticky, add more confectioners sugar to achieve the right consistency.
  3. Form Peanut Butter Balls: Use your hands or a small scoop to form balls about 1 to 1.5 inches in diameter. Place the formed balls on a baking sheet and refrigerate for at least one hour to allow them to set.
  4. Refine the Shape: After chilling, roll each peanut butter ball between your palms to make them perfectly round. The mixture will have firmed up to hold its shape better.
  5. Melt the Chocolate: In a microwave-safe bowl, combine the sugar-free dark chocolate chips and coconut oil. Microwave in 30-second increments, stirring well between each, until fully melted and smooth.
  6. Dip and Coat: Using a fork or dipping tool, dip each peanut butter ball into the melted chocolate, ensuring they are fully coated. Place the coated buckeyes on a parchment-lined baking sheet.
  7. Set the Chocolate: Refrigerate or freeze the chocolate-coated buckeyes until the chocolate has hardened completely, about 30 minutes. Serve chilled for best texture and flavor.

Notes

  • If the peanut butter mixture is too sticky to handle, gradually add more sugar-free confectioners sugar to reach the desired consistency.
  • Use natural peanut butter without added sugars or oils for best keto compliance.
  • For ease, using a stand mixer helps to blend the filling evenly.
  • Chocolate coating can be customized with sugar-free milk chocolate or white chocolate as preferred.
  • Store buckeyes in an airtight container in the refrigerator for up to one week or freeze for longer storage.
