Ingredients

Crust

  • 1 ½ cups (126 g) graham cracker crumbs, about 10–12 full sheets
  • 2 tablespoons granulated sugar
  • ⅓ cup (76 g) unsalted butter, melted
  • 1 teaspoon key lime zest

Filling

  • 2 packages (8 ounces each) cream cheese, room temperature
  • ½ cup (62.5 g) confectioners’ sugar
  • ¼ cup key lime juice, about 6-8 key limes
  • 2 teaspoons key lime zest
  • 2 cups (240 g) whipped cream, store-bought or homemade

Toppings (optional)

  • Whipped cream
  • Key lime zest
  • Key lime slices
  • Extra graham cracker crumbs

Instructions

  1. Prepare the crust: In a medium bowl, mix graham cracker crumbs, granulated sugar, melted butter, and key lime zest until the crumbs are evenly coated with butter, forming a sandy mixture.
  2. Form crust base: Evenly divide the crust mixture among 6 parfait cups or jars, pressing lightly to create a compact crust layer at the bottom of each cup. Set aside.
  3. Make the filling: In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add confectioners’ sugar, key lime juice, and key lime zest and continue mixing until fully combined.
  4. Fold in whipped cream: Gently fold the whipped cream into the cream cheese mixture until the filling is smooth and evenly blended, yielding about 4 cups of filling.
  5. Assemble cups: Spoon or pipe the cheesecake filling evenly over the crusts in each parfait cup or jar.
  6. Chill: Cover the filled cups and refrigerate for at least 2 hours, allowing the cheesecake to set firmly.
  7. Add toppings and serve: Before serving, garnish with optional whipped cream, lime zest, lime slices, and extra graham cracker crumbs for added flavor and presentation. Serve chilled.

Notes

  • Key lime zest and juice provide an authentic tart flavor, but regular lime can be substituted if key limes are unavailable.
  • For a homemade whipped cream, beat heavy cream with a bit of sugar until stiff peaks form.
  • These cheesecake cups can be made a day ahead and stored covered in the refrigerator.
  • Use ripe, fresh key limes for the best flavor and aroma.
  • To make the crust gluten-free, substitute the graham cracker crumbs with gluten-free graham crackers or crushed gluten-free cookies.
