Ingredients

Key Lime Glaze

  • 1 cup powdered sugar
  • 1 tablespoon key lime juice
  • 1 tablespoon milk
  • ¼ teaspoon vanilla extract
  • Pinch of salt (optional)
  • ½ teaspoon key lime zest

Instructions

  1. Preheat and Prepare Dry Ingredients: Preheat the oven to 350°F (175°C). In a small bowl, whisk together the flour, salt, and baking soda. Set aside.
  2. Cream Butter and Sugars: In a separate mixing bowl, combine the softened butter, brown sugar, and sugar. Using an electric mixer on high speed, beat for 1-2 minutes until the mixture is light and fluffy in texture.
  3. Add Wet Ingredients and Lime Zest: Beat in the egg and vanilla extract until fully incorporated. Then add the key lime zest, folding it in evenly.
  4. Combine Dry and Wet Mixtures: Add one-third of the flour mixture to the wet ingredients and beat just until mixed. Continue to gradually add the remaining flour mixture until a dough forms, mixing gently to avoid overworking.
  5. Shape Cookies: Roll the dough into 1½ inch balls and place them evenly spaced on a parchment-lined baking sheet.
  6. Bake Cookies: Bake for 8-10 minutes, or until cookies are set but still soft. Remove from the oven and allow cookies to cool on the sheet for 2-3 minutes.
