This Easy Lightened Up Taco Soup is a flavorful and hearty stovetop recipe perfect for any season. Loaded with organic ground beef, fresh vegetables, and homemade taco seasoning, this soup offers a comforting American-Mexican fusion. The addition of a bit of heavy whipping cream adds richness, but can be omitted for a lighter version. It’s quick to prepare, cooks in one pot, and can be customized by substituting chicken or adding ranch dressing.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onions
  • ½ cup chopped green peppers
  • 1 pound ground beef (organic, grass-fed)
  • 3 cups beef broth
  • 1 (14.5 oz) can diced chilis and tomatoes
  • 4 oz tomato sauce
  • ½ cup heavy whipping cream (optional for flavor)

Taco Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 teaspoon red pepper (optional for spicy)

Instructions

  1. Prepare vegetables: Heat a Dutch oven over medium-high heat and add the olive oil, chopped onions, and green peppers. Cook for 2-3 minutes until onions become translucent and fragrant.
  2. Cook ground beef: Add the ground beef and taco seasoning blend to the pot. Break down the beef using a meat chopper or spatula, cooking for 3-4 minutes until no longer pink. Drain excess fat if necessary.
  3. Add liquids and simmer: Pour in the beef broth, diced tomatoes and chilis, and tomato sauce. Stir well to combine all ingredients.
  4. Simmer soup: Reduce heat to low, cover the pot, and let the soup cook gently for 10-15 minutes to allow flavors to meld.
  5. Finish and season: Remove the lid and stir in the heavy whipping cream if using. Taste and adjust the seasoning by adding salt and pepper as needed.
  6. Serve: Ladle soup into bowls and top with your choice of toppings such as shredded cheese, sour cream, or cilantro.

Notes

  • You can substitute ground beef with ground chicken for a leaner option.
  • Omit the heavy cream for a lighter, dairy-free version.
  • Add a teaspoon of ranch seasoning or a dollop of ranch dressing for extra flavor.
  • Serve with tortilla chips or crusty bread for a complete meal.
