Ingredients

2 lbs lean or extra lean ground turkey
2.5-3 lbs zucchini, cut into thin slices
1 medium onion, finely chopped
1 pint grape tomatoes, cut in halves
3/4 cup pesto
1/4 tsp salt
2 tbsp Parmesan cheese, grated
1 tsp oil
Instructions
Preheat the Skillet: Preheat a large ceramic non-stick skillet over medium heat. Add oil to coat the pan. Sauté the onion for 3 minutes, stirring occasionally.
Cook the Turkey: Add the ground turkey to the skillet and cook for 5-7 minutes, breaking it into pieces while stirring.
Add Zucchini: Stir in the zucchini and cook for an additional 3-4 minutes, stirring occasionally.
Finish the Dish: Turn off the heat and add the halved grape tomatoes and pesto. Stir to combine.
