  2. Beat Egg Whites: Using an electric mixer equipped with the whisk attachment, beat the egg whites on medium speed. Add the cream of tartar and a pinch of salt to stabilize the meringue as you continue to beat until soft peaks form. This ensures a stable base for your meringue.
  3. Add Maple Sugar Gradually: Slowly add the maple sugar, about 1 tablespoon at a time, while continuing to beat the egg whites until stiff peaks form. The mixture should look glossy and hold its shape firmly, indicating it’s ready.
