This homemade Matcha Green Tea Ice Cream offers a creamy, rich custard base infused with the delicate, earthy flavors of matcha powder. Perfectly smooth and creamy, this ice cream is a delightful treat for matcha lovers and dessert enthusiasts alike.

Ingredients

Custard Base

  • ⅔ cup sugar
  • 4 egg yolks
  • 1 ½ cup whole milk
  • 1 ½ cup heavy cream
  • 2 tablespoon matcha powder

Instructions

  1. Prepare the Custard Base: In a saucepan, whisk together the sugar and egg yolks until the mixture becomes pale yellow and smooth. Then, stir in the whole milk thoroughly to combine all ingredients.
  2. Cook the Mixture: Place the saucepan over low heat and cook, stirring constantly to prevent curdling or scorching. Heat until the mixture thickens enough to coat the back of a spoon and reaches approximately 170˚F. This ensures the egg yolks are safely cooked and the custard base is ready.
  3. Add Matcha and Cream: Remove the custard from heat and whisk in the matcha powder and heavy cream until fully incorporated. To ensure a smooth texture, pour the mixture through a fine mesh sieve to remove any lumps or undissolved matcha particles.
  4. Chill the Mixture: Refrigerate the strained custard mixture until it is thoroughly chilled. This step is essential for proper churning in the ice cream machine.
  5. Churn the Ice Cream: Pour the chilled mixture into a pre-frozen ice cream machine bowl (freeze the bowl for at least 24 hours prior). Churn for 20 to 30 minutes until the ice cream achieves a soft serve consistency.
  6. Freeze to Set: Transfer the freshly churned ice cream into a freezer-safe container. Freeze for a minimum of 2 hours to firm up before serving.

Notes

  • Freeze the ice cream machine bowl for at least 24 hours before use to ensure efficient churning.
  • This recipe yields approximately 1 quart of ice cream.
  • The matcha powder may not fully dissolve initially, but once churned, the ice cream will be smooth with the matcha evenly incorporated.
