This Matcha Tiramisu is a delightful twist on the classic Italian dessert, combining the rich creaminess of mascarpone and whipped cream with the earthy, vibrant flavor of matcha green tea powder. Perfectly layered with soft ladyfingers soaked in a fragrant matcha syrup, this no-bake dessert is elegant and refreshing, making it an excellent choice for gatherings or a special treat.

Ingredients

Mascarpone Cream

  • 3 large egg yolks, room temperature
  • 1/4 cup sugar
  • 1 tub (8 ounces) mascarpone cheese, room temperature

Whipped Cream

  • 1 cup heavy whipping cream
  • 1 tablespoon sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons matcha (green tea powder), sifted

Assembly

  • 24 to 28 soft ladyfingers, split
  • 2 teaspoons plus 1 tablespoon matcha (green tea powder), sifted, divided
  • 1 tablespoon sugar
  • 1-1/4 cups hot water

Instructions

  1. Make the mascarpone cream: In a large bowl, beat the egg yolks and sugar together for four to five minutes until they turn pale yellow. Then, add the softened mascarpone cheese and continue beating for two to three minutes until the mixture is smooth and creamy.
  2. Make the whipped cream: In a separate large bowl, whip the heavy cream with sugar, vanilla extract, and 2 teaspoons of sifted matcha powder until medium peaks form, about four to five minutes. For best results, chill the mixing bowl and beaters in the freezer before whipping.
  3. Fold whipped cream into mascarpone mixture: Gently fold the whipped cream into the mascarpone mixture until just combined. Set aside the creamy mixture.
  4. Prepare the matcha soak: In a shallow bowl, whisk together 2 teaspoons of sifted matcha powder, sugar, and hot water until frothy, about 30 seconds.
  5. Dip and layer ladyfingers: One at a time, briefly dip the ladyfingers into the matcha soak, then arrange them round side up in a single layer in an 8-inch square baking dish. Cut ladyfingers as needed to fill the dish completely. Spread half of the mascarpone cream evenly over this layer.
  6. Repeat layers: Repeat the dipping and layering with the remaining ladyfingers and mascarpone cream to form a second layer.
  7. Chill: Cover the dish and refrigerate for at least four hours or overnight to let the flavors meld and the tiramisu set.
  8. Finish with matcha dusting: Just before serving, sprinkle up to 1 tablespoon of sifted matcha powder evenly over the top. Cut into squares and serve.
