Ingredients

Base and Sauce

  • 3 to 4 tablespoons hummus (homemade or store bought)

Falafel and Salad

  • 16 falafels
  • Tabouli salad (quantity as desired)

Vegetables

  • 2 medium vine-ripe tomatoes, halved and sliced
  • 1 English cucumber, halved and sliced
  • 6 radishes, halved and sliced
  • 1/2 medium red onion, thinly sliced

Cheese and Seasoning

  • 4 ounces feta cheese, sliced
  • Extra virgin olive oil, for drizzling
  • Sumac (optional, for seasoning)

Instructions

  1. Prepare the base: In shallow dinner bowls, spread about 3 to 4 tablespoons of hummus on one side of each bowl to create a creamy base.
  2. Add salad and falafel: Place a generous portion of tabouli salad next to the hummus. Then add 3 to 4 falafel patties per bowl, arranging them neatly.
  3. Add fresh vegetables and cheese: Fill the remaining space in each bowl with the halved and sliced tomatoes, cucumber, radishes, and thinly sliced red onion. Add sliced feta cheese evenly over the vegetables.
  4. Finish with seasoning: Drizzle each bowl generously with extra virgin olive oil. Sprinkle a dash of sumac over the top if desired to add a tangy, citrus-like seasoning.
