This Seafood Pasta Salad is a delicious and refreshing dish perfect for picnics, potlucks, or a light summer meal. Tender tri-color pasta is combined with crunchy celery, imitation crabmeat, and sweet green peas, all coated in a creamy and tangy dressing.

Ingredients

Pasta:

  • 1 ½ (8 ounce) packages tri-color pasta

Salad:

  • 3 stalks celery, chopped
  • 1 pound imitation crabmeat, chopped
  • 1 cup frozen green peas, defrosted

Dressing:

  • 1 cup mayonnaise
  • 1 ½ tablespoons white sugar
  • 2 tablespoons white vinegar
  • 3 tablespoons milk
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Cook Pasta: Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes until al dente. Rinse under cold water, drain.
  2. Prepare Ingredients: Chop celery and crabmeat. Defrost peas by running hot water over them.
  3. Make Dressing: In a large bowl, whisk together mayonnaise, sugar, vinegar, milk, salt, and pepper.
  4. Combine: Add pasta, celery, and crabmeat to the dressing. Mix until coated.
  5. Chill: Adjust seasoning to taste. Chill salad for several hours before serving.
