Ingredients

For the Miso Glaze

  • ¼ cup packed dark brown sugar
  • 2 tablespoons red miso
  • 2 tablespoons hot water
  • 2 tablespoons soy sauce

For the Salmon

  • 4 skinless salmon fillets, 5 to 6 ounce pieces
  • Kosher salt, for seasoning
  • Black pepper, for seasoning
  • 2 tablespoons sliced green onions
  • ½ teaspoon sesame seeds
  • Olive oil, for lightly drizzling on the baking sheet

Instructions

  1. Preheat the Oven: Set your oven rack to the lowest position and heat the oven on the high broil setting. Line a large baking sheet with foil and lightly drizzle olive oil over it to prevent the salmon from sticking. Set this aside while you prepare the glaze.
  2. Make the Glaze: In a medium bowl, whisk together the dark brown sugar, red miso, hot water, and soy sauce until smooth. This will create a thick, flavorful glaze that will coat the salmon perfectly.
  3. Glaze the Salmon: Season both sides of the salmon fillets with kosher salt and black pepper. Place the fillets on the prepared baking sheet, making sure they are spaced at least 2 inches apart. Spoon or brush about 1 tablespoon of the miso glaze over the top and sides of each fillet. Reserve any remaining glaze for later steps.
  4. Broil the Salmon: Place the baking sheet on the lowest rack in the oven and broil the salmon for 5 minutes. Then, remove the salmon from the oven, brush on more of the reserved glaze, and return it to the broiler for another 3 minutes. Finally, brush on the glaze one last time and broil until the salmon flakes easily with a fork and reaches an internal temperature of 135 to 140ºF (57 to 60ºC), about 2 more minutes depending on the thickness of the fillets.
  5. Serve: Transfer the broiled salmon to a serving platter or individual plates. Garnish with sliced green onions and sesame seeds for added flavor and presentation. Enjoy immediately while warm.

  • Ensure the oven rack is in the lowest position to prevent the glaze from burning while broiling.
  • Use an instant-read thermometer to check for doneness; salmon should be moist but fully cooked.
  • If you prefer a less sweet glaze, reduce the brown sugar by half.
