Mississippi Pot Roast is a decadent, slow-cooked beef roast infused with bold flavors from ranch seasoning, au jus powder, and tangy pepperoncini. Cooked low and slow in a slow cooker, the chuck roast becomes tender and juicy, perfect for serving over creamy mashed potatoes for a satisfying comfort meal.

Ingredients

Beef and Seasonings

  • 1 (4 to 5 pound) chuck roast
  • 1 (1.1 ounce) packet au jus powder (we recommend Johnny’s Powdered Au Jus)
  • 1 (1 ounce) packet ranch seasoning

Additional Flavorings

  • 6 tablespoons salted butter, cut into small pieces
  • 10 whole pepperoncini peppers
  • ½ cup pepperoncini juice

Serving Suggestion

  • Mashed potatoes, for serving

Instructions

  1. Season the roast: Place the chuck roast into the slow cooker. Sprinkle the au jus powder evenly over the top, followed by the ranch seasoning to ensure a balanced flavor coating the meat.
  2. Add additional flavorings: Distribute the small pieces of salted butter over the roast. Top the roast with whole pepperoncini peppers and pour in the pepperoncini juice, which adds a subtle tangy and slightly spicy flavor to the dish.
  3. Cook the roast: Cover the slow cooker with the lid and set it to cook on low heat for 8 hours. This slow cooking method breaks down the meat fibers, resulting in a roast that is extremely tender and easy to shred with a fork.
  4. Prepare for serving: Once the cooking time is complete and the roast is tender, use a slotted spoon to transfer the roast to a large baking dish or rimmed sheet pan. Discard any large pieces of fat remaining in the slow cooker. Reserve the flavorful cooking liquid to use as a sauce.
  5. Serve: Pull apart or slice the roast and serve it hot over creamy mashed potatoes. Spoon the reserved cooking liquid over the top to enrich the dish with its savory juices.

Notes

  • For extra flavor, you can sear the chuck roast in a hot skillet before placing it in the slow cooker to develop a rich crust.
  • If you prefer less spice, reduce the number of pepperoncini peppers or rinse them before using.
  • Leftover roast can be shredded and used for sandwiches or tacos.
  • Ensure your slow cooker is large enough (7 to 8 quarts) to accommodate the roast comfortably.
  • Using salted butter helps balance the flavors, but adjust seasoning to taste if using unsalted butter.
