Muddy Snowballs are a delightful twist on classic Rice Krispie treats, combining gooey marshmallows, crunchy cereal, and a rich chocolate peanut butter coating. These no-bake sweet treats are easy to make and perfect for parties or a fun snack.

Ingredients

Base Ingredients

  • 8 tbsp butter (1 stick, divided)
  • 1 (16 oz) bag mini marshmallows (roughly 8 cups, divided)
  • 6 cups Rice Krispie cereal

Chocolate Coating

  • 1 1/2 cups semi-sweet chocolate chips
  • 1/3 cup creamy peanut butter

Finishing

  • 1 1/2 cups powdered sugar

Instructions

  1. Melt Butter and Marshmallows: In a large saucepan over medium-low heat, combine 6 tablespoons of butter with 6 cups of mini marshmallows. Stir continuously until the mixture is completely melted and smooth.
  2. Add Cereal and Marshmallows: Pour in the Rice Krispies cereal and stir well to combine. Then add the remaining mini marshmallows and mix until they are evenly distributed throughout the mixture.
  3. Form Balls: Lightly wet your hands to prevent sticking, then scoop about 1/3 cup of the Rice Krispie mixture. Roll it tightly into a ball. Continue this process, rewetting your hands as needed, until all the mixture is used up.
  4. Prepare Chocolate Peanut Butter Mixture: In a microwave-safe bowl, combine the semi-sweet chocolate chips, peanut butter, and the remaining 2 tablespoons of butter. Microwave in 30-second intervals, stirring between each, until the mixture is melted and smooth.
  5. Coat Rice Krispie Balls: Transfer the Rice Krispie balls into an extra-large bowl and pour the melted chocolate peanut butter mixture over them. Stir gently to coat each ball evenly with the chocolate mixture.
  6. Roll in Powdered Sugar and Chill: Roll each coated ball in powdered sugar until fully covered. For a firmer chocolate coating, refrigerate the muddy snowballs for 15 minutes before serving.
