This classic Neiman Marcus Chicken Casserole is a creamy, cheesy, and crunchy baked dish featuring tender cooked chicken, savory cream of chicken soup, sour cream, and a crispy Ritz cracker topping. Perfect for a comforting family meal served warm straight from the oven.

Ingredients

Crust Topping

  • 1 Sleeve Ritz Crackers (crushed)
  • ½ cup Butter (melted)

Casserole Filling

  • 4 cups Cooked Chicken (diced or shredded)
  • 1 can Cream of Chicken Soup (10.5 ounces)
  • 1 cup Sour Cream
  • 1 teaspoon Garlic Powder
  • 2 cups Shredded Cheddar Cheese
  • 4 Green Onions (thinly sliced)
  • ½ cup Slivered Almonds (optional)
  • 10 slices Bacon (cooked and chopped)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350 degrees F and spray a 9×13 inch baking dish with nonstick cooking spray to prevent sticking.
  2. Make Cracker Topping: In a small bowl, gently stir together the crushed Ritz crackers and melted butter until coated evenly. Set aside this crunchy topping mixture.
  3. Prepare Casserole Filling: In a large mixing bowl, combine the diced or shredded cooked chicken, cream of chicken soup, sour cream, garlic powder, shredded cheddar cheese, sliced green onions, optional slivered almonds, and chopped cooked bacon. Mix well until all ingredients are thoroughly incorporated.
  4. Assemble Casserole: Spread the chicken mixture evenly into the prepared baking dish, smoothing the top for an even layer.
  5. Add Cracker Topping: Sprinkle the buttered Ritz cracker crumbs evenly over the surface of the casserole filling for a crispy crust.
  6. Bake: Bake in the preheated oven for 25 to 30 minutes, or until the cracker topping is golden brown and the casserole is bubbling around the edges.
  7. Rest and Serve: Remove the casserole from the oven and let it rest for 5 minutes before serving. This allows it to set slightly and makes serving easier.

Notes

  • For a nut-free version, omit the slivered almonds.
  • Use rotisserie chicken or leftover cooked chicken for convenience.
  • Customize the cheese by substituting with your favorite melting cheese like Monterey Jack or Mozzarella.
  • The bacon can be cooked in advance and stored in the refrigerator until needed.
  • Make sure to slightly crush the Ritz crackers but not to powder to maintain crunch in the topping.
