These no-bake Pineapple Balls are a delightful treat combining creamy butter, sweet confectionary sugar, and shredded unsweetened coconut with juicy pineapple chunks, all rolled in crunchy graham cracker crumbs. Perfect for a refreshing dessert or snack, they require no baking and can be stored frozen for on-demand enjoyment.

Ingredients

Base Mixture

  • 1 cup butter or margarine, softened
  • 1/2 cup confectionary sugar (powdered sugar)
  • 2 cups unsweetened shredded coconut
  • 1 cup pineapple chunks, cut into cubes

Coating

  • 1 cup graham cracker crumbs

Instructions

  1. Cream Butter and Sugar: In a mixing bowl, cream together the softened butter or margarine with the confectionary sugar until smooth and well combined. This creates the sweet, creamy base for the pineapple balls.
  2. Add Coconut: Stir in the unsweetened shredded coconut thoroughly so that it is evenly mixed into the butter and sugar mixture, forming a cohesive dough-like consistency.
  3. Form and Fill Balls: Using one or two tablespoon-sized scoops, take portions of the mixture and roll them into balls in the palm of your hand. Use your finger to make a small indentation in the center of each ball, place a pineapple cube or half a cube inside, then carefully close the hole with more mixture, sealing the pineapple inside.
  4. Coat with Graham Cracker Crumbs: Roll each filled ball in the graham cracker crumbs until fully coated, which adds a lovely crunch and extra flavor to the treats.
  5. Chill for Storage: Place all the pineapple balls in a container with a lid. Refrigerate them for short-term enjoyment or freeze for longer storage. When ready to serve, simply remove the desired amount and enjoy chilled or slightly thawed.

Notes

  • For easier preparation and less mess, have all ingredients measured and set out in separate bowls before starting.
  • Cut pineapple cubes smaller or in halves to create smaller pineapple balls and increase the number of servings.
  • These pineapple balls can be kept frozen and only take out what you need to serve, maintaining freshness.
