This Old Bay Sheet Pan Chicken & Squash recipe offers a simple, flavorful one-pan meal featuring juicy chicken thighs roasted alongside tender butternut squash, potatoes, and onions, all seasoned with the classic Old Bay seasoning and fresh parsley for a deliciously balanced dinner.

Ingredients

Chicken and Vegetables

  • 2 lbs chicken thighs (approximately 68 chicken thighs depending on size)
  • 3 medium potatoes, scrubbed and cut into about 2 inch pieces
  • 1/2 small butternut squash, peeled and cut into about 2 inch pieces
  • 1 small onion, peeled and diced

Seasoning

  • 1 1/2 tablespoons Old Bay seasoning
  • 2 tablespoons fresh chopped parsley
  • Olive oil, for drizzling

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (210°C) to prepare for roasting the chicken and vegetables.
  2. Arrange Ingredients: On a large baking sheet, evenly arrange the chicken thighs, potato pieces, butternut squash cubes, and diced onion, ensuring they are spaced out and not overlapping for even cooking.
  3. Season: Sprinkle Old Bay seasoning and fresh chopped parsley over the chicken and vegetables. Drizzle olive oil over everything, then toss or use your hands to coat all ingredients evenly with the seasoning and oil.
  4. Initial Roast: Place the baking sheet in the preheated oven and roast for about 25 minutes to begin cooking and developing color on the chicken and vegetables.
  5. Shake and Baste: Remove the pan from the oven, gently shake it to prevent sticking, and pour any accumulated pan juices over the chicken and vegetables to keep them moist and flavorful.
  6. Finish Roasting: Return the pan to the oven and continue roasting for an additional 20 to 25 minutes, until the chicken is fully cooked through and the vegetables are tender.
  7. Serve: Remove from oven and serve hot, enjoying the perfectly roasted, seasoned chicken thighs and vegetables.

Notes

  • Use bone-in, skin-on chicken thighs for the best flavor and juiciness.
  • Adjust cooking time depending on the size of the chicken thighs to ensure they reach an internal temperature of 165°F (74°C).
  • Feel free to substitute butternut squash with other winter squash varieties like acorn or delicata.
  • For crispier skin, broil the chicken for the last 2-3 minutes of cooking, watching carefully to avoid burning.
  • This recipe is easily doubled to serve more people, just use a larger sheet pan or two pans.
