Delightfully moist and fragrant Orange Muffins featuring bright orange zest and juice, enhanced with a light, sweet orange glaze. Perfect for breakfast or a citrusy snack, these muffins combine yogurt and vegetable oil for a tender crumb.

Ingredients

Muffins

  • 2 large eggs at room temperature
  • ½ cup (120 ml) vegetable oil (can substitute with melted butter)
  • ½ cup (125 g) plain yogurt (natural or Greek; can substitute with milk or sour cream)
  • ¼ cup (60 ml) orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon orange extract (optional)
  • 2 cups + 2 tablespoons (270 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Glaze

  • 1 cup (120 ml) powdered sugar
  • 1 tablespoon (15 ml) orange juice

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (180°C). Line a muffin pan with muffin liners to prevent sticking and set aside.
  2. Mix wet ingredients: In a large bowl, beat the eggs using a whisk. Add the vegetable oil, plain yogurt, orange juice, orange zest, vanilla extract, and if using, orange extract. Whisk these ingredients together thoroughly to combine the flavors.
  3. Add dry ingredients: To the wet mixture, add the all-purpose flour, granulated sugar, baking powder, and salt. Stir gently with a whisk until just combined, taking care not to overmix to keep the muffins tender.
  4. Fill muffin cups and bake: Evenly divide the batter among 12 muffin cups, preferably using a cookie scoop for uniform size. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Once done, allow the muffins to cool completely in the pan.
  5. Prepare the glaze: In a small bowl, mix the powdered sugar with the orange juice. Adjust the glaze consistency by adding more orange juice if needed until it is drizzle-ready.
  6. Glaze and garnish: Drizzle the orange glaze over the cooled muffins and garnish with additional orange zest if desired. Serve and enjoy!
