This recipe for Baked Boneless Chicken Thighs features tender, flavorful chicken seasoned with a blend of spices including smoked paprika, cumin, and cayenne pepper. The thighs are coated in olive oil and spices, then baked to juicy perfection at 400°F. It’s a simple yet delicious dish perfect for an easy weeknight dinner.

Ingredients

Chicken

  • 2 pounds boneless skinless chicken thighs

Seasoning & Oil

  • 2 tablespoons olive oil
  • 1 teaspoon Diamond Crystal kosher salt (or ½ teaspoon other kosher salt like Morton)
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (not regular paprika)
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper

Instructions

  1. Preheat and Prepare Chicken: Preheat your oven to 400°F. Pat the chicken thighs dry thoroughly with paper towels to help the oil and spices adhere better. Place the chicken in a large mixing bowl.
  2. Season Chicken: Add the olive oil along with salt, black pepper, garlic powder, onion powder, smoked paprika, ground cumin, and cayenne pepper to the bowl with the chicken. Use your hands to thoroughly coat each thigh with the seasoning mixture evenly.
  3. Arrange for Baking: Spread the seasoned chicken thighs out in a single layer on a rimmed baking dish, such as a 9×13-inch pan. If there are any leftover oil and spice bits in the bowl, brush them over the thighs for added flavor.
  4. Bake the Chicken: Place the baking dish uncovered in the preheated oven. Bake the chicken for about 30 minutes, or until cooked through. The chicken is done when the juices run clear and an instant-read thermometer inserted into the thickest part reads at least 165°F. Timing may vary depending on the size of the thighs and your oven.
  5. Serve: Once out of the oven, give the chicken thighs a brief turn in the pan juices to coat them and enhance flavor. Serve immediately.

Notes

  • Ensure chicken thighs are patted dry before seasoning to get a better sear and crisp exterior.
  • Cooking times may vary; smaller thighs or hotter ovens might cook the chicken faster.
  • Use an instant-read thermometer to ensure internal temperature reaches 165°F for safety and optimal juiciness.
  • If you want a crispier edge, you can broil for the last 2-3 minutes watching carefully to avoid burning.
  • Leftover baked chicken thighs can be stored in an airtight container in the refrigerator for up to 3 days.
