Ingredients

Pancakes

  • 1/2 cup all-purpose flour
  • 1/2 tablespoon granulated sugar

  • Pinch of salt

  • 1 small egg, slightly beaten
  • 1/2 tablespoon neutral oil
  • 1/3 cup buttermilk

Scrambled Eggs

  • 2 eggs
  • Salt and pepper, to taste
  • Remaining 1 tbsp butter (for cooking)

Instructions

  1. Prepare the pancake batter: In a bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and a pinch of salt until combined.
  2. Combine wet ingredients: In a separate small bowl, whisk the slightly beaten egg, neutral oil, and buttermilk. Pour this wet mixture into the dry ingredients and stir just until mixed. Avoid overmixing to keep pancakes fluffy.
  3. Cook the pancakes: Heat a nonstick pan over medium heat. Add ½ tablespoon butter and let it melt. Pour enough batter to form two pancakes. Cook until bubbles appear on top, then flip and cook 1-2 minutes more until golden. Transfer pancakes to a plate.
  4. Make scrambled eggs: Wipe the pan clean and add the remaining butter. Crack the eggs into a bowl, season with salt and pepper, and beat well. Pour eggs into the pan and cook to your desired consistency. Set aside.
  5. Cook the sausages: Clean the pan again and place it over medium heat. Cook the sausages for 3-5 minutes, turning occasionally, until they are golden brown and cooked through.
