Crispy roasted Parmesan Brussels sprouts with a savory garlic butter paste, finished with a golden cheese crust and a hint of olive oil, delivering a perfect balance of flavors and textures in a simple oven-roasted side dish.

Ingredients

Brussels Sprouts

  • ½ pound Brussels sprouts, trimmed and halved lengthwise

Cheese Paste

  • ¼ cup unsalted butter, melted
  • ⅓ cup grated Parmesan cheese
  • 1 teaspoon garlic powder

Seasoning and Finishing

  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • Additional Parmesan cheese for sprinkling on top (about 1-2 tablespoons)

Instructions

  1. Preheat the Oven: Position the oven rack in the middle and preheat your oven to 425ºF (220ºC) to ensure a hot environment for roasting.
  2. Prepare the Brussels Sprouts: Trim the stems off the Brussels sprouts and cut each sprout in half lengthwise to allow for even cooking and caramelization.
  3. Make the Cheese Paste: In an 8-inch baking dish, whisk together ⅓ cup grated Parmesan cheese, melted butter, and garlic powder until combined. Spread this mixture evenly across the bottom of the dish to create a flavorful base for the sprouts.
  4. Add Brussels Sprouts: Arrange the Brussels sprouts cut-side down in the baking dish, pressing them gently into the cheese paste. Brush the tops with olive oil, then season evenly with kosher salt and black pepper. Sprinkle a little extra Parmesan cheese over the tops for a cheesy crust.
  5. Roast: Place the dish in the oven and bake for 20 to 25 minutes, or until the cheese and the surface of the sprouts turn a deep golden brown, indicating crispiness and caramelization.
  6. Serve: Remove from the oven and cool on a wire rack for 5 minutes. This cooling step crisps the cheese edges for the perfect texture. Use a knife or spoon to separate the sprouts and serve while hot.

Notes

  • For even cooking, make sure all Brussels sprouts are roughly the same size before halving.
  • You can sprinkle additional Parmesan halfway through roasting for an extra cheesy crust.
  • Leftovers can be reheated in the oven to retain crispiness rather than microwaving.
  • If you prefer a milder garlic flavor, reduce the garlic powder to ½ teaspoon.
  • Using fresh Parmesan cheese instead of pre-grated yields better texture and flavor.
