These PB&J Bites are a quick, no-bake snack combining oats, peanut butter, and jelly with chia seeds for an energy-boosting treat. Perfect for a grab-and-go snack or a healthy dessert, they’re easy to make and customizable with optional add-ins like chocolate chips or nuts.

Ingredients

Base Ingredients

  • 2 ½ cups quick-cooking oats
  • ⅔ cup peanut butter (see notes for nut-free option)
  • ½ cup natural jelly or fruit spread
  • 2 tablespoons chia seeds

Optional Add-ins (½ cup total)

  • Mini chocolate chips
  • Chopped nuts or seeds
  • Coconut flakes

Instructions

  1. Mix the ingredients: In a mixing bowl, combine oats, peanut butter, jelly, and chia seeds. Stir until well incorporated and the mixture forms a dough that holds together when pressed between your palms.
  2. Form the balls: Use a 2-tablespoon cookie dough scoop to scoop the dough into portions. Press the dough firmly into the scoop, then release and place each ball on a baking sheet. Repeat until you have 24 balls.
  3. Store properly: Transfer the PB&J Bites into an airtight container. Store in the refrigerator for up to 7 days, at room temperature for up to 3 days, or freeze for up to 3 months for longer storage.

Notes

  • For a nut-free option, substitute peanut butter with sunflower seed butter or soy nut butter.
  • You can customize the bites by adding mini chocolate chips, chopped nuts, seeds, or coconut flakes.
  • Make sure to use natural jelly or fruit spread for a healthier snack option.
