These Low-Carb Peanut Butter Chocolate Pecan Turtles are a delicious and guilt-free treat that combines creamy peanut butter, crunchy pecans, and rich sugar-free chocolate. Perfect for a quick snack or dessert, they are easy to make and ideal for those following a low-carb diet.

Ingredients

Peanut Butter Mixture

  • 1 cup natural peanut butter
  • 1 cup sugar-free confectioners sugar
  • 1 Tbsp coconut oil (or melted butter or avocado oil)

Chocolate Topping

  • 1 cup sugar-free chocolate chips
  • 2 tsp coconut oil (or melted butter or avocado oil)

Assembly

  • 60 raw pecan halves
  • Coarse sea salt (optional)

Instructions

  1. Prepare Peanut Butter Dough: Add the natural peanut butter, sugar-free confectioners sugar, and 1 tablespoon of coconut oil into a stand mixer or mixing bowl. Mix on medium speed or beat by hand until a thick, dough-like consistency forms.
  2. Assemble Turtles: Arrange 5 raw pecan halves on a baking sheet in the shape of a turtle. Take about 1 to 1.5 tablespoons of the peanut butter dough, shape it into an oval resembling a turtle shell, and press it firmly onto the pecans so they stick well. Repeat this process with the remaining pecans and peanut butter dough, placing each turtle back onto the baking sheet.
  3. Melt Chocolate: In a microwave-safe bowl, combine the sugar-free chocolate chips and 2 teaspoons of coconut oil. Microwave in 30-second increments, stirring well after each until the mixture is melted and thick but still spoonable, approximately 1 to 1.5 minutes total.
  4. Drizzle Chocolate: Spoon or drizzle the melted chocolate over each peanut butter turtle to form a chocolate shell. Optionally, decorate the turtles with extra pecans or sprinkle with coarse sea salt for added flavor and texture.
  5. Chill to Set: Place the baking sheet with the assembled turtles in the refrigerator or freezer. Allow them to chill until the chocolate is fully set, about 2 hours. Once set, they are ready to serve.

  • Use natural peanut butter without added sugars or oils for best low-carb results.
  • Keep the chocolate mixture thick so it doesn’t run off the turtles.
