Deliciously soft and chewy peanut butter cookies made with a rich combination of shortening, peanut butter, and sugars. These classic cookies are easy to prepare, perfect for satisfying your sweet tooth or sharing with friends and family.

Ingredients

Wet Ingredients

  • 1 cup shortening
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 3 large eggs, room temperature

Dry Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the cookies once the dough is prepared.
  2. Cream Ingredients: In a large mixing bowl, cream together the shortening, peanut butter, sugar, and brown sugar until the mixture is light and fluffy, which should take about 5 to 7 minutes. This step is crucial for incorporating air, resulting in a tender cookie.
  3. Add Eggs: Add the eggs one at a time to the creamed mixture, beating well after each addition to fully incorporate and maintain the fluffy texture.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Then gradually add this dry mixture to the wet ingredients, mixing until the dough is well combined.
  5. Shape Cookies: Roll the dough into 1 1/2-inch balls. Place them about 3 inches apart on ungreased baking sheets to allow room for spreading.
  6. Flatten Dough: Gently flatten each ball with a meat mallet or fork if desired to create the classic peanut butter cookie imprint and ensure even baking.
  7. Bake: Bake in the preheated oven for 10 to 15 minutes, until the cookies are golden and set around the edges.
  8. Cool: Remove the cookies from the oven and transfer them to wire racks to cool completely. This will help them firm up and develop their chewy texture.

Notes

  • For best texture, use eggs at room temperature.
  • If you prefer crispier cookies, bake closer to 15 minutes; for chewier cookies, bake around 10 minutes.
  • You can refrigerate the dough for 30 minutes if it’s too soft to handle.
  • Storing in an airtight container keeps the cookies fresh for up to one week.
