These Peppermint Oreo Cookies combine the classic chocolatey crunch of crushed Oreo cookies with refreshing peppermint pieces for a perfect festive treat. Easy to prepare and bake, these cookies balance sweet and minty flavors, making them an ideal dessert for the holiday season.

Ingredients

Dry Ingredients

  • 1½ cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp cornstarch

Wet Ingredients

  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 tsp vanilla extract

Mix-ins

  • 3/4 cup Oreo cookies, crushed
  • 3/4 cup Andes Peppermint Pieces, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 400°F and line a baking sheet with parchment paper to prepare for baking.
  2. Cream Butter and Sugars: Using a stand mixer with a paddle attachment, cream together the cold cubed butter, brown sugar, and white sugar on low speed until the mixture is light and fluffy, about 4 minutes.
  3. Add Wet Ingredients and Dry Mixers: Add the egg, vanilla extract, salt, baking soda, and cornstarch to the creamed mixture. Mix until smooth, scraping down the sides of the bowl as needed to ensure even mixing.
  4. Incorporate Flour: With the mixer on low, gradually add the all-purpose flour to the wet ingredients and mix until just combined to form the cookie dough.
  5. Prepare Mix-ins: On a cutting board, finely chop the Andes Peppermint Pieces. Place Oreo cookies in a ziplock bag and crush them by hand. Gently fold the crushed Oreos and chopped peppermint pieces into the dough with a rubber spatula, reserving some pieces to press on top of the cookies.
  6. Shape Cookies: Using a 1.5 tablespoon cookie scoop, portion dough balls onto the prepared baking sheet. Press the reserved Oreo and peppermint pieces onto the tops of the cookies for added texture and appearance.
  7. Bake: Bake the cookies for 8-10 minutes until the edges are golden brown and the centers begin to set. The centers may appear slightly underdone but will firm up as they cool.
